Tequila & Mezcal: Agave, Alcohol-Free
Tequila and mezcal are both distilled from agave, but they diverge sharply in flavor: tequila (traditionally made from blue Weber agave, largely steamed before fermentation) tends toward a peppery, vegetal, slightly sweet profile, while mezcal (made from a wider range of agave species, often roasted in earthen pits) carries a distinctive smokiness. Alcohol-free versions of each track that same split — agave nectar or agave-derived flavor compounds for the vegetal backbone, plus wood-smoke extracts for mezcal-style versions.
Because tequila itself is categorized by aging (blanco/unaged, reposado/rested in oak, añejo/long-aged), alcohol-free tequila-style drinks borrow the same vocabulary — an unaged “blanco” style stays crisp and peppery, while oak extracts push a version toward the rounder, vanilla-tinged character of a reposado.

- Almave Blanco (Jalisco, Mexico) — Fresh agave aromas with fruity, green vegetal notes; a bright, agave-forward palate with a touch of minerality, spice, balanced acidity and a subtle bitterness. Made from real blue agave, distilled in the traditional way but never fermented into alcohol in the first place. Allergen/dietary: Producer states vegan, gluten-free, low calorie. Ingredients include blue agave hydrolate, water, blue agave syrup, glycerol, natural aromas, arabic gum, malic and citric acids, salt and tannins.
- Almave Ámbar (Jalisco, Mexico) — Cooked agave, caramel, vanilla, roasted agave, bell pepper and earthy smoke on the nose; brown sugar, toasted wood, allspice, cacao and dried fruit on the palate, finishing smooth, warming and smoky. Warming agent: a pepper/smoke character. Allergen/dietary: Producer states the same profile as Blanco, plus French oak hydrolate, apple cider vinegar and natural glycolipids as a preservative; some US listings carry a general “may contain allergens” statement worth taking seriously rather than dismissing as boilerplate.
- Ritual Tequila (Agave) Alternative (Chicago, USA) — A grassy, smoky-aromatic profile the producer describes as capturing tequila’s “bright fire.” Ingredients include caramel colour and salt. The most technically interesting story in this category: Almave follows traditional tequila distillation using real blue agave, but simply never ferments it — so the agave never becomes alcohol in the first place, rather than having alcohol added and then removed. That’s philosophically different from every dealcoholized product on this page.
