Sparkling Rosé Bellini

- 1.5 oz / 45 ml white peach purée
- 4 oz / 120 ml Bolle Sparkling Rosé or Prima Pavé Rosé Brut
Purée into a flute, top slowly. Bolle is made by secondary fermentation with a proprietary low-alcohol yeast strain rather than dealcoholization, which is why it carries creamier texture than most — ideal here.
