Almave Blanco Margarita

- 2 oz / 60 ml Almave Blanco
- ½ oz / 15 ml fresh lime juice
- ¼ oz / 7 ml agave nectar
- 3 dashes orange bitters (0.0% if needed)
Wet the rim with lime and apply black sea salt. Combine everything in a shaker, add ice, shake. Strain over fresh ice into the salted glass. Dehydrated lime wheel. Note the restraint — half an ounce of lime and a quarter of agave against two ounces of base. Almave has real agave acidity of its own, so it needs far less correction than a flavor-built spirit.
